My friend is a vegetarian as well, she lost 20 pounds. Pretty sure if you add cardio in your schedule you would lose weight. I’m a firm believer that walking is one the easiest ways to lose weight
You know what really got me to lose weight? And I wasn't even trying. Almost entirely eliminating sugar from my diet. I didn't just suddenly decide to. I gradually backed off it over time. I've been slowly losing weight ever since, and when I get more exercise even more. (Summers are too hot here for much exercising, looking forward to fall).
I like how you expressed tolerance of people whose digestive tolerances are different. That seems to me to be left out of this kind of conversation too frequently.
My favorite breakfast is frying up parboiled sliced potatoes, red bell pepper, spanish onion, sometimes a little yellow squash, adding a little cheddar and maybe some salsa roja. Homemade applesauce, whole milk plain yogurt, and a little pickled something on the side. Sometimes that's most of what I eat all day.
I've never gone vegan but I've been vegetarian a lot. We all eat each other one way or the other so to me focusing on food source quality is central, both for us and those who feed us.
I 100% get you on the veganism, I am vegan. Diet is so much about the person and their body needs. I ain't gonna tell people what to do because it's not right! I've been vegan for four years and it's done wonders for my mental health, my lactose intolerance, and my psoriasis. I transformed my body during that time and got into bodybuilding as a practice for reconnecting with my body. The mind-muscle connection is incredible. We are so powerful. For me, I'm a huge fan of tea but of course I am more partial to my cafecito. It feels like it connects me to my roots. A cafecito (usually a double espresso with a little oat milk) and an ezekiel bread sandwich with some fresh veggies is my breakfast. I like light breakfasts because I'm never hungry in the morning. If I don't feel like eating the sandwich, I do a protein shake and look forward to a big, fancy lunch instead.
I was literally about to say I totally understand why you prefer coffee. When I think about coffee I think about islands lol it makes perfect sense. Yes!! Heavy on the light breakfasts, same here I don’t want anything too heavy. Just enough to shut my stomach up. Your a good example why veganism work in your favor cause your cured stomach/skin issues.
I think it's really important to listen to your body when it comes to diet. You're the one who gets to live in there, not all these other people telling you what to do.

I like eating brown sugar toast with fruit and almond butter spread with egg whites and turkey sausage. It’s great after a gym session.
